It is possible with IDC at the 50 pin end and solder at the 25. In fact,
I just made up such a cable for my PC (my Future Domain SCSI card has a
female DB-25 but does NOT use the Apple pinout!!) and it works fine.
I used solder type connectors at both ends and the 50 way cable was split
into 26 and 24 way sections to get it through the backshells.

For an Apple pinout one I would buy the cable rather than make it.
This cable took me two evenings of work (I was being very careful with
the pinouts). I commoned the extra grounds to bare wires between pairs of
ground pins at the 25 pin end. It is rather tedious making 100 solder joints.
