Almost any SCSI hard drive should work.
You will have problems dealing with a drive larger than 64 MB if you
have a IIe, because the partitioning software can only set up two
partitions. With a IIgs, you can use Advanced Disk Utility to set up
many more partitions (only seven are accessible under ProDOS-8, for a
maximum of 224 MB).
I am using a Quantum LPS240 (about 230 MB) on a Rev C SCSI card, and
it works fine.

You might run into problems replacing the mechanism - newer drives are
likely to be a smaller form factor (3.5" vs 5.25", possibly thinner as
well) and might not mount in the old case. There may also be problems
with the power supply, but this is less likely.
