You have to installed the HFS FST from the System 6.0.1 disks. I assume
it's on one of the utility disks and isn't installed by default. If you
need the System 6.0.1 disks, check out this FTP site:
ftp://ftp.apple.com/dts/aii/sys.soft/gs.system.6.0.1/
ftp://ftp.support.apple.com/pub/apple_sw_updates/US/Apple\ II/Apple\ IIGS\ System\ 6.0.1/
The first site has the disks in BINSCII'ed ShrinkIt format, the second
in BINSCII'ed ShrinkIt format and Mac BinHex'ed image format.

Mac and Apple // files both use plain carriage returns for EOL (End Of
Line) markers, so you should just be able to save the text file to the
Mac disk without translation.
I would also assume that you can *ONLY* read/write 800K disks unless you
have a SuperDrive and Apple's SuperDrive Disk Controller Card.
