Of course it isn't reversible.  I thought it was a well known occurrence
for apples to tan with age.  Have you considered genetically enhanced
apples?  They still tan with age, but they do stay light longer.  You
might also look into picking apples fresh off the valley.  There was
this place up in Northern California where you could buy the finest
apples.  Unfortunately, the original owners moved on and you can probably
guess what happened to the apples.  Hey, aren't you keeping your apples
around a tad too long.  I know in our family mom would use the apples
to make apple pie once they've reached their peak color.  And, this is
only after a few weeks.  You're keeping them around for years?
