Are you still using your original Apple IIgs power supply?  It sounds
like you don't have enough amperage that is needed for all your cards
and system.  I had the exact same problems when I had an Innerdrive 100
used as a power supply.  I swapped it out and used my Innerdrive 40 as
a power supply and the problems cleared up.
