AFP over AppeTalk was dropped in Mac OS X 10.4. Since then, you have to use AFP over TCP/IP. This rules out any possibility of an Apple IIgs connecting to Mac OS X 10.4 or later, unless there is a third party solution (such as an AFP over TCP/IP implementation for the IIgs, or an AFP over AppleTalk file server for Mac OS X 10.4).
In theory, you could run netatalk on Mac OS X. It's basically BSD underneath the pretty UI.
