The only manufacturer of ADC boards for the Apple II I know for
sure is Omega Engineering. They make one DANDY of an ADC designed
specifically for reading a variety of temperature sensors, but it
could easily be used for other things as well. The best ADC I've 
ever used for the II, and still use, is the AI-13. It used to be
built by a company called Interactive Structures, then Daisy. A
few years ago we got a mailing from a company that bought Daisy and
commented they were going to continue to build and supply the AI-13
and a few other boards including a really nice 32 line I/O board.
Unfortunately, for the life of my I can't remember their name or
want I did with the flier. I'll dig around and see if I can find
it, and maybe in the mean time someone else knows who they are. I
wanna say Pasrons Engineering, but I'm probably wrong. Another
route to ADC work, but less veratile, is to get a stand-alone
data logger and interface it to your IIe with a Super Serial
card. We've done that with a couple of different systems. One
even runs with AppleWorks and TimeOut Telecomm!
