Oh... in that case, it's probably possible, but still sounds risky if
you have any SCSI hard drives hooked up. I don't know of any software
that lets you do that though. Anyways, SCSI is not my area of
expertise, so you should probably ask someone else for the right
answer :-)

As for localtalk, you can just hook the GS and Mac printer ports
together via a Mac to ImageWriter II printer cable (mini DIN 8 on both
ends). Use the Installer to install Network: AppleShare on your GS
boot disk, then turn on appletalk in the control panel (on ROM 01s,
set Slot 1 to Your Card and Slot 7 to Appletalk, I think. On ROM 3s,
set Slot 1 to Appletalk.) Don't forget to reboot for your changes to
take effect.
On the Mac, you have to be running System 7 and have the File Sharing
software installed. Go to the Sharing Setup control panel and enable
file sharing, and make sure that AppleTalk is turned on in the
Chooser.
Now you should be able to go to the GS and use the AppleShare Control
Panel (control panel NDA, not the CDA) to login to the Mac and access
its HD. LocalTalk runs at 230.4Kbps, so it's faster than null modeming
:) It also seems to make you lose characters coming in through the
modem port... bleah :(
