I have successfully used the "Apple Keyboard" and "Apple Extended
Keyboard" (which I'm using right now). I've heard that the "Apple
Extended Keyboard II" works properly, but the new split keyboard does
NOT work. I don't know about the el-cheapo keyboards supplied with
the Classic and LC, but they should work.
A friend is using a third-party extended keyboard, which he has no
problems with, but there may be some brands which don't work. I'm not
sure what brand his one is.

Probably a lot cheaper. I doubt you'd find any incompatible
keyboards, assuming they are reasonably normal. Be wary of any with
special features like programmable keys, or any keyboard which
requires the use of a device driver on the Macintosh.
