It depends on the file size. Copying a lot of small files to an HFS
volume is much slower than a ProDOS volume.
However, HFS really shows its speed when copying large files on a fast
hard drive. My SyQuest sounds like it has a ratchet in it - the head
moves very quickly.
System 6.0.1 is a definite improvement over 6.0.

Not off-hand. My main concern with HFS volumes is the lack of disk
recovery software should something go wrong. You can't use the
Macintosh-based utilities unless the drive has a Macintosh device
driver installed, and A.D.U. doesn't put one on there unless it is an
Apple drive.
