Hmmm.... for what its worth, that configuration is almost identical to mine (except my Zip GSX is running at 12.5MHz and my CFFA is partitioned differently) and it worked fine for me? Hopefully you and Antoine can figure out what is wrong.
I did make one mistake during the install however, in that the first time I went to install I had copied the MountIt files onto the CF card using Ciderpress, but forgot to preserve the folder structure. Running the install in this state failed (with an error message), but it didn't take me long to figure out the error of my ways...
MountIt is a handy feature to have, as it allows for easy install of software directly from the images. This is particularly useful for me, as I have most (all?) of the images from the "What Is The Apple IIgs" site saved to a HFS partition on my CFFA. Having MountIt removes the need to recreate a floppy using DiskMaker (or similar), or unshrinking to a temporary file.
