Best option for writing (book) on Apple II

Hi csa2'ers, LTNS (very LT in fact),

For personal reasons, I want to write my next book entirely on an 8-
bit system. Apropos of Apple, I have a couple of IIcs and a Laser 128,
and I'm thinking that using a IIc might give me the best experience.
IIgs is a bit too modern for my taste, besides which I don't currently
own one.

What WP software should I use for the easiest import to a modern WP
when I'm ready to send the mss. off to the publisher? I have
AppleWorks, and that's about it right now - I haven't seen an obvious
way to get AppleWorks docs into any readable format. I don't want to
print direct from the Apple II.

The only formatting I'll want to preserve is paragraph marks, bold,
italic and underline. I'll be writing the book a chapter at a time, so
limited RAM accessibility isn't much of a problem.

Suggestions on WP software, and also the best method to upload the
finished documents to a PC, would be gratefully received.

Thanks.
