The same way z80, 6809, 65816, 68000 coprocessors are "Apple II" ?

Exactly.  And of those, only the Z-80 has any meaningful software
base for the (8-bit) Apple II platform.  All the others are just a
basis for experiments--not that there's anything wrong with that.  ;-)

Of course, the 65816 (et al.) is a special case, since it has a
compatibility mode (in which it is a 65C02).
