Right you are.

I hook up all my Apple II models (including my Apple //e 'enhanced' and
Apple IIe 'extended' directly to the composite video inputs on my
Commodore 1084 and Commodore 1702 monitors.

If your Apple IIe and C-1084 monitor are both North American (NTSC), you
should get full color, no problem.  Just make sure the knobs and
appropriate buttons on the front and back of the 1084 are set correctly
(ie. Composite video input, etc.).
