Yes, there are high density 3.5" floppy drives available for Apple IIs.
However, if you are making a disk image, the 2IMG format supports pretty
much any size up 32 MB for a ProDOS disk image and larger for an HFS
disk image.

If you want to have a bootable GS/OS disk with some room for a decent
application and some data then yes, a high density 3.5" disk is a much
better fit than an double density 3.5" disk.
