You're probably confusing the other rendering options, of which there
are many. These are to simulate the look of a TV or arcade monitor on
modern VGA monitors (e.g. visibly defined rasters) and not an attempt
to emulate the NTSC (or PAL) output of the actual machines.
Some emulators do this now - notably NES/SNES ones - using Blargg's
NTSC Libraries:

If you look closely, you can see the rightmost images are quite
reminiscent of double-hires on the IIGS RGB monitor, and the leftmost
images look much more like what you'd see on a TV.
I was planning to look into this, but Real Life has taken over. :-(
