I ended up finding the parts only at:

They were very friendly and seemed quite knowledgeable on the phone.
Cable and D-sub connectors and shields (with some extra d-sub
connectors) were $18 shipped. They had two different types of Apple
IIGS cables made to work with other types of RGB monitors, just not the
1080. Gino (the sales rep I spoke with) told me they would build me a
cable to my pinout specs for $48. He made it clear the labor was the
issue, not the parts. :-) Again, very friendly and aware of what I was
trying to do. I expect the parts in a few days and I"ll give making
the cable a shot.
I am looking forward to trying to make the cable myself :-)
