As I see it there are three ICs unique to the Apple IIe, the MMU, the IOU and the PAL. (The ROMs can be dumped and replaced by EPROM.) Fortunately, you can find those three chips socketed in older Apple IIe boards. Finding the right 65C02 (several varieties being marketed) may be more difficult.
