Most 'TV' type devices produce or decode a composite signal based on the NTSC standards. From what I remember in TV servicing, TVs and some monitors (And the Apple II) utilize a composite signal to produce the picture. The color encoding scheme that has to be decoded to get the colors to display and is applied to the composite signal has no name that I am aware of.
Purely by definition, they are a composite display. If it decodes the color pulse then it is a color composite display.
And considering the title of this thread, the IIgs does not decode a composite signal and is an RGB monitor that happens to work at video refresh rates similar to a composite monitor.
