It is possible to run 3x 3.5 drives on a IIgs with no additional hardware.
You just have at least two different 3.5 drive types:

Option #1
IIGS -> Apple 3.5 -> Apple 3.5 -> UniDisk 3.5

Option #2
IIGS -> Apple 3.5 -> UniDisk 3.5 -> UniDisk 3.5

Either of these options can also include a 5.25" drive at the end of the
daisy chain.

You can even have 4x 3.5 drives like this:

IIGS -> Apple 3.5 -> Apple 3.5 -> UniDisk 3.5 -> UniDisk 3.5
