One way is to do it in an emulator. As an example, in Bernie ][ The 
Rescue you can set up a virual hard drive with IIGS System 6 installed 
and then copy files to it by dragging them from the Mac Finder to the 
emulated IIGS's window. Then you can use ShrinkIt to open the archive 
and extract the contents to a new disk image.
