Help! Transferring software for a school.

Because of classroom space, we are removing the Apple //e's, but we want
to continue using the software under emulation. The problem is converting
the 5.25 disks over to a format for the emulator.

I've got access to a 1meg IIgs with both 3.5 and 5.25 in drives, and a Mac
LC with the //e card along with a 5.25 drive and 3.5 in drive. Almost all
of the software is educational, but I did find a ProDOS disk.

What's the easiest way to convert the disks (a lot of them, probably 50-100)?
