The usual approach is to use a sector editor, such as the "disk zap" from
Bag of Tricks or the editor in Copy ][+'s bit copier. (If you want to be
"old school", load a copy of The Inspector into the language card.)
With that, and a copy of Beneath Apple DOS, you can make DOS do just about
anything.
