Slight problem doing this with Apple II discs:

1) the src and dst drives would have to be spindle synced to
   successfully copy some copy protected discs or at least
   running at the same speed to copy even normal discs.

2) not interpreting the data means that a copy might start in
   the middle of a sector causing a glitch that would likely make it unreadable.

That would have a better chance but still has problems as you indicate.
