Try the simple stuff first:
If you think the shielding may be an issue,pull the shieldling out of
the case and run your IIgs without it.
Try a heat gun/hair dryer and see if you can make the board fail by
heating specific areas the same way you attempted to locate problem
areas with the freeze spray.
I concur with Michael. It is probably a stress induced by the being in
the case. Physical stress laterally along the board, probably combined
with a minor heat up to emphasize a crack in a trace or cold solder
joint. As video is messed up, I'd check the 'slow ram' for solder
cracks first and concentrate on testing the board in that area.
