For some reason, I cannot unstuff
Disk_2_of_7-System.Disk.sea.bin
on my Mac LCIII.  Even if I unstuff it on my PC (I'm using an FTP

Most likely the version of Stuffit you are using is not old enough. Ijust downloaded the file from Apple and it worked perfectly with my*very* old Stuffit Expander. Version 6 which is also installed on mysystem displays an error.
