The Apple II/II+ unfortunately does not allow you to remove the logo easily.
The metal plate bends quite easily, so if anyone is thinking of removing
these, consider finding a replacement plate (I have two Apple II plates and
two II+ plates on reserve for situations like this).

All other models should have a breathing hole behind the logo. You can use a
probe of some sort to pop the logo off using the hole. On the Apple IIe
beige cover they're there. On the platinum IIe, I can "feel" the breathing
hole as I run my finger along the inside of the shell where the logo sits.
On the IIGS cover, the hole is also there. Can't confirm the hole on the IIc
models.

So the next question would be what to do with the painted on lettering, such
as the "Apple IIGS" and the "Apple IIe" lettering on the platinum cases.
I've been researching, but not heavily, on producing what would be the
equivalent to the decals you see in the modeling industry. Someone once
wrote to me that there is a material you could print on with a color laser
printer that will wet transfer to a surface. I've yet to find anything like
this. If there is such a thing, you can use the Apple Garamond font
(available on the Macintosh platform if you can get your hands on the Apple
marketing CDs) to print the exact same lettering on these models. I've also
seen other suggestions, such as printing the lettering on thin transparent
material, then spray with a clear coat of something to protect it from
coming off or smearing. Also if you could somehow create a silk screen and
paint the logo onto the shell, which is how Apple actually does. And, it
look like making these silk screen templates is quite simple and cheap to
make (I made silk screen t-shirts back in high school). Thoughts on decal
production and related are more than welcome! :)
