3.5 Disk installer so that it could format 1.44 meg disks.  So far, so good!

I didn't have to use the Installer disk with 6.0.1 to format 1.44MB disks. From the docs, that disk was aimed more for System 5.0.x. . .

Works fine with 1.44 meg PRODOS disks.  I then installed the MSDOS FST and
rebooted.  I checked the FSTs folder and the MSDOS one is there.  But when I
put in a formatted MSDOS disk, nothing happens.  The disk light comes on
momentarily, but no disk shows up on the desktop and no message is
displayed.

First, use Special|GetInfo on MSDOS.FST to make sure it's not marked Inactive. Second, revert to GS/OS 6.0.1's original Apple 3.5 Drive driver file, if the first thing doesn't work.

At least that's my humble advice, as the native 6.0.1 driver works fine for me. Though remember that the GS won't format FAT (MS-DOS) disks. Just HFS and ProDOS 1.44MB volumes... (But Basilisk II, a Mac emulator, can read ProDOS/HFS floppies on the PC. I use that as my intermediary in a transfer from IIgs to PC.)
