The Apple II is alive and well, it is simply difficult to contradict what
you have to say for the 8-bit models.

The Apple IIgs, which is based on the 65816, is a different story. It
already has an excellent GUI from Apple (GS/OS), TCP/IP stack, ethernet
card, hard drive controllers (IDE and SCSI), accelerator cards, and other
goodies. Unfortunately, most of these are left over from more prosperous
days so there has been little incentive to develop new hardware and
software. But opportunities are abound and people take advantage of them
when the need arises.
