Commodore has made some nice ones.  The 1702, an old unit -- 13 or 14" I 
believe, had separate chroma and luma inputs which was (exactly) 
equivalent to what we call s-video today.  I've seem some C64's hooked 
to it with a very, very good image.  Notably superior to composite.  
Commodore was ahead of the game on that one.

...the Apple II does not output signals that could make use of or work 
with that monitor.  Well, I suppose you could extract s-video from the 
RGB port of a IIgs with a device, but you're better off with an RGB 
monitor than an s-video monitor anyway.
