I said in my original post that I had just such a card installed my LC.
However the missing piece to my puzzle was the Y adapter cable made for this
card, the existence and information about which I discovered on ebay of all
places. With that cable you can connect one of the external Floppy drives
which I mentioned I also had. (I actually have 4 from ebay).

After discovering the Y cable, all the info I needed fell into place.

For anyone looking for similar info on this thread, yesterday using better
search terms I found lots more information.

Supported Macs that will run the LC apple II card:

card compatible: LC, Colour Classic, LC II, LC III, LC 475, LC 520, LC 550,
LC 575, Quadra 605, Performa 4XX, Performa 55X, Performa 56X, Performa 57X

Since you can buy an older LC, (or better yet, the Quadra 605) and run the
card on System 7.5 (which is a free OS downloadable from apple) the card and
the cable and a drive are going to be a simple, low cost solution for
transferring and even running your old Apple II disks on the Mac. You can
even partition your drive with a prodos partition, allowing you to store
files right on the mac. A great solution.
