In general you want a Mac you can open up to put the NIC into. To boot the GS off the Mac you will need Appletalk of some sort installed (I'm not an expert).

As to the internet... I'm going to make an alternate suggestion... If you have a Mac capable of running some form of *NIX (Linux, OSX, whatever) you can connect your GS to the Mac as a terminal. You'll still probably need a hard drive, but it works fine. This way you can set up your own shell account and still have access to the high speed internet you hinted you were looking at. FYI, Locally the Cable folks suggest at least something running OS8 to connect to their system.
