I too am in the process of upgrading a ZipGS card but what I've
decided to do with the cache RAM sockets is to simply add half a
socket to the set of pin holes in the middle of the existing sockets.
This means having to cut out the cross pieces on the sockets that are
currently installed and cutting the same pieces out of the socket that
I'm about to insert (see figure 1; cut at the arrows with side
cutters). This leaves the board with the socket in figure 2.
I then desoldered the holes in the middle of that socket by putting
the ZipGS card in an old PC motherboard's ISA slot to keep it standing
up and apply a soldering iron to one side of a hole and using one of
the spring loaded solder suckers (purchased at Radio Shack I believe)
to the other side. When the solder was hot, I'd press the button on
the solder sucker and the hole would end up completely clear of
solder.
Then I soldered in half of a socket that I had cut just like in figure
one into the holes (see figure 3). This allows me to use either the
wide or skinny cache RAMs on my ZipGS.

I started trying to use solder wick but it was going too slow and it
is still quite likely that you might end up applying heat to the board
for too long this way while trying to get that last bit of solder out
of the hole. I prefer to use a solder sucker.
If this upgrade works I'll be upgrading another shortly after this one
and I'm hoping to document the entire process, as well as alternative
ways to achieve the same thing as I'm doing. I'm going to video tape
everything that I do so that I can capture still images from it to put
on a web page.
