The Iomega driver on the Mac will only recognise HFS partitions, not
ProDOS or other file systems using Apple's partitioning scheme.  (HFS
Plus is OK, because it looks like HFS in the partition table.)

In fact, I don't even know if the Iomega driver supports a partitioned
ZIP disk.  It doesn't offer partitioning, and Drive Setup doesn't work
on a ZIP disk.

PC Exchange (or File Exchange) adds support for PC-formatted ZIP disks,
but doesn't handle ProDOS disks unless the driver supports them.

It might be possible to access a ProDOS and/or partitioned ZIP disk
using third-party drivers (e.g. FWB's HDT), but I'd hesitate to
recommend trying this.
