I do not think this is possible with a ProDOS partition.  To function
on this way requires the Mac Plus to be set up as an AppleShare
server, not just MacOS System 7 file sharing.  Also, you would not
be using ProDOS.  You would be using AppleShare.

Remember, everything the IIGS does with regard to drives and
file systems involves FSTs.  You want to use the ProDOS FST
to somehow access a ProDOS partition over an AppleTalk network.
This is not possible.  The ProDOS FST is for direct connect
volumes already.  GS/OS provides the AppleShare FST for reading
AppleShare based volumes.  To the Mac, the drives you set up
for AppleShare are just standard HFS volumes.

Assuming you can mount the ProDOS partitions, you still will not
be able to boot over a network from them.  You must do this
via AppleShare and the AppleShare FST.  But if you were doing
that, you should not need to mess with ProDOS at all.
