To answer the original question....Yes, a DeskWriter 600 printer will 
work just fine on a IIGS with the Harmonie v2.11 drivers. 

I just spoke to Burger Bill, and he clarified for me the issue of 
Harmonie and the HP DeskWriter.
 
In short, if a DeskWriter works with a 680x0 Mac computer, it will work 
on a IIGS with the Harmonie DeskWriter 560c driver.
 
As Bill explained it to me, HP made a short-lived change on some DeskWriter
models (I still need to find out the exact model numbers effected) that sent
data to the printer at 512k Baud.
 
But, since the Apple IIGS serial port is the same serial port as is found on
680x0 Macs, HP soon discovered that those serial ports had a maximum baud 
rate of 115k and that the DeskWriter no longer worked with those older 
Macs. So, they quickly released a new DeskWriter that was Mac 680x0 (and 
IIGS) compatible.
 
Bill Heineman says that the DeskWriters that didn't work on a IIGS were only
sold for a very short time, and that any current DeskWriter for sale 
today should work just fine (from GS/OS) with Harmonie and the IIGS.
 
So, if a DeskWriter is advertised as working on a 680x0 Mac, it'll work 
on a IIGS with Harmonie. But, again, that's only from GS/OS software;  
DeskWriters cannot be used from ProDOS-8 based programs.
 
In the meanwhile, I'll try to locate the non-GS compatible DW model number.
