The IIe will try booting first from slot 7, then 6,
then 5, etc. If you want to boot from the HD, put
the SCSI card in 7.

The card came with Apple (copyrighted) software for
partitioniong, etc. There are some freeware(?) utils
floating around (diskhacker?) to do some of this.

Depending on your HD size, Prodos will handle it way
back to (probably) 1.1.1. You should (in theory)
always use the latest version for your machine.
If the HD is <64MB (two partitions or less) then
generally no problem. If larger, then only Prodos
2.X+ (?) will "remap" the extra partitions (up to
six?) into "empty" slots so you can access them.

But(?) the supplied 8-bit partitioning software
probably only lets you create two partitions.
