Apple /// Emulation Mode?

I just bought an old Apple /// which appears to be in working
condition.  However, the only software (or documentation) which
came with it was a "System Demonstration" disk.  Any clues where I
might be able to find software and/or manuals for this machine?

I'd be especially interested in finding out how to run the Apple ///
in the "Apple ][ Emulation Mode."  Is that part of the standard
operating system, or do I need a special disk to boot the computer?
