Ha ha - actually I did this too - my third GS had a broken case anyway.
I bought it for spare parts and combined them wherever possible ;-)

I used a standard German PAL machine with the appropriate keyboard &
(very short) cable and a US NTSC board. Never seen a platinum IIe with
German keyboard, though.

Understandable. I first changed boards simply for the picture ratio and
to get roughly the same picture quality of an early eighties gamer with
composite monitor. I don't think that many games were produced with
RGB monitors in mind.
Later I even changed an "International NTSC" board from 50 to 60 Hz
(replacing the crystal & IOU chip) to make it output "real" NTSC and
keep AUX and Slot 3 in line - for a French RGB card with 64KB aux
memory ("Le chat mauve - Eve")
It worked but 60 Hz were too much for the card and after two or three
days only the 64KB were still working - making it pretty much
useless...
I didn't like the card too much, anyway (wrong colors, no hires text
in double hires graphics), but it showed me that my old TV could
produce a fabulous RGB picture in 80 column mode.
Maybe I get my grubby hands on a RW3 board someday ;-)
