IIGS built-in sound chip is Ensoniq 32 with 16 stereo voices simultaneously which
is far more sophicated than mono 3 voices SID, Amiga 8 bit PCM (Pulse Coded
Modulation) 6Khz 4 stereo voices or Atari STe 3 voices & 8 bit PCM 2 voices.
Sure, SID chip could be stereo after modification.
Stereo sound cards were avialable for IIGS. NoiseTracker (NT) was invented on IIGS
and subsequently converted to Amiga. Whilst, NT/MOD scene might not have been
huge, nearly every cracker/hacker group demo disk used it!
