Mac first... Does the G3 still support serial ports?  If so you should be 
able to do Appletalk filesharing to and from the GS.

If not, and on the PC/*nix side you would need a Localtalk<->Ethernet 
bridge such as a Gatorbox to allow the GS to access an Appleshare style 
file server.
