Ok I got Easy Update to install System 6, but when I got to boot from my hard drive I get the Check Startup Device message. Did I do something wrong?  Do I have to do something special to the partition I install System 6 on?  Could the fact that I made 7 partitions have anything to do with it (I think that's the max the High Speed SCSI can support)?
