If you have a serial printer, you might try connecting the Apple II serial
output to a PC serial port, starting up HyperTerminal on the PC, and then
"printing" the data from the IIgs to the PC, where you can "capture" it
in a file.

Alternatively, if you have a 3.5" floppy on your Apple II and access to an
older (pre-iMac) Mac, you can "print to file" in Appleworks, using a 3.5"
floppy as the target, then take the disk to a Mac and import the text
file into the desired Mac program.  You can even copy the text file to
a PC-formatted 3.5" floppy and take it to a PC and import it there.

If you need to preserve the structure of the data, not just the values,
then CrossWorks is a good way to make the transfer.
