Well for what it's worth and not limiting myself to 1 disk games, here

Loderunner
Wavy Navy
David's Midnight Magic
Sneakers
Stella 7
Choplifter
Lady Tut
Castle Wolfenstein
Karateka

Text Adventures:

Hitch-hiker's Guide to the Galaxy
Infocom's Enchanter series
Amnesia (Electronic Arts)
Other Infocom games including Trinity, Suspended, Ballyhoo, Zork I - III
Mindwheel (Synapse)
The Pawn (Magnetic Scrolls)

RPGs:

Wizardry (particularly I & IV)
Ultima IV-V
Wasteland
Bard's Tale series

Other:

Robotwar (Great game! Anyone got any robots to trade?)
Sargon (Chess)
Elite
Seven Cities of Gold
Reach for the Stars
Kampfgruppe
Flight Sim 2

The games are listed roughly in my order of preference (within genre),
but for me they are all classics.
