I can't help with a source, but I wanted to point out one detail:
This isn't an "RGB to CGA" adaptor. It might be an "Apple IIc to CGA"
adaptor, or (more likely) an "Apple IIc to Digital RGB" adaptor. The
name "Video-7" sounds right.
The 15-pin video port on the IIc is not an RGB port. It is a video
expansion port, which requires an appropriate adaptor to connect nearly
any type of monitor. There were apparaently Video-7 adaptors for both
analog RGB (compatible with the Apple IIgs) and digital RGB (compatible
with the Apple III and with digital RGB options for the Apple IIe, and
adaptable to CGA).
(The only display I know of which can connect directly to the IIc video
expansion port is the LCD screen made by Apple specifically for the IIc.
There might be a third-party equivalent.)
