Assuming you have the max motherboard RAM + the 16k "Language Card" + a
Disk Controller card to run your 5.25" drives, you can run any "64k Apple II"
software and practically all DOS 3.3 software. You can also run ProDOS software
that does not require 128k and/or an enhanced Apple //e and most Pascal-based
wares.
Putting this another way, you can run many good utilities and most old
Apple II games (such as Ultima, Bard's Tale, Magic Candle, Wizardry, Pool of
Radiance, Champions of Krynn, Tangled Tales, Enchanter, Elite, SkyFox, ...).

Software designed to take advantage of an enhanced //e's larger memory
and/or its 80-col (double-hires, double-lores) display features will not run on
a II+. This includes just a few games (like King's Quest, Might and Magic II,
ArrowHeart); but, it also includes quite a few nice utilities and productivity
wares.
Of course, no for-IIgs software will run on a II+ or any other 8-bit Apple
II computer.
On the other hand, there are some old games which will run on only an
Apple II+ or II.
