Well, in my case the disconnects are happening when booted from the local drive. I dug out my Zip support diskette and browsed the READMEs. For machines booted from local drives that simply access the Appleshare service, they imply that ZipGS.Resetter is not required for OS > 5.04 (I use 6.0.1).
For laughs, I tried copying in the ZipGS.Resetter. No change. It still drops the session in about 2 minutes.
Are you sure that ZipInit is particular to Appleshare networking? I thought that was where the default Zip settings are kept to restore them at boot.
