(Ouch--try to stay within 70-column width!

You can use almost any I/O card made for the Apple ][ series, including
parallel output cards, parallel input/output cards (usually 6522-based),
analog-to-digital converter cards, and digital-to-analog converter cards.
DSP cards are _not_ typically in this I/O genre.

I don't know of any such cards currently being manufactured, but there
are a raft of them out there on the used/junk market.
Try c.s.a2.marketplace.

One issue is that most of them will not come with software, so you'll have
to reverse engineer them a bit and get data sheets on the conversion and
I/O chips to write low-level drivers.  Then you can whale away at them
from your favorite programming language!
