Robotic Control via Apple ][ ... a few questions

Hello Everyone!

I friend of mine dumped an old apple ][ on me a while ago. After taking
out every single card except for the drive controller, it works.

My goal is to eventually use it to control Agbot... my  lifelong 4-h 
project. I've dissected it into the motherboard, power supply, keyboard
(amazing how high-tech a fine-tooth saw can be ;-)

I've figured out to give input via the game i/o but I can figure out the
"o" part. How do I set switch values?

Second thing is, does anybody know how to use the expansion slots as analog
output??

Finally, does anyone know how this keyboard encoder/decoder thing works...
or shouldn't i bother?
