The more cache is the better option. The speed difference between 7&8MHz is not much, but you will really notice having more cache. The other option is to get the slowest board with the minimum cache that you can, and upgrade it yourself (need to get some srams, and a faster crystal). I have done this, and curently run a 10MHz/64k card, and the upgrade only cost me $40, and a little patients.
